The other thing that needs stupidly fast ADCs is real time digital scopes. Equivalent time sampling scopes have been giving GHz bandwidth since the 1960s. For example the Tek 500 series with the 1S1 plugin. That was pure analogue. In a DSO these need fast sample/hold front end but the actual digitising can be leisurely. But if you want to capture fast one shot events then you can't cheat. The ADC has got to be quick. The associated memory has to be quick too. If you're sampling at 6GHz there's little point unless you can save the samples at that speed.
