There is a flat, circular weight behind the movement and covering about a third of it. It is pivoted in the middle so can rotate either way. Gravity pulls it downwards so, as you move, the weight is constantly swinging backwards and forwards and it is this motion that is used to wind the mainspring.
It only winds a very little each time it swings but because the watch is moving about most of the day, it is sufficient to keep the spring fully wound.
