Same power available from a transformer regardless of whether secondaries are in series or parallel. If I've got a centre tap available then a bridge rectifier, +ve and -ve regulators and job's done.

The arrangement on your circuit only makes sense if the bulk of the current is from the 6V rail and the +/-12V rails only supply a small current.
