That's going to be quite a potentiometer - a large wire-wound job, I'd imagine. And it'll run fairly warm..
Might be worth considering a small variac ahead of a 240->6.3 transformer. Such a variac might be easier to source than a pot?
Otherwise, that all sounds reasonable to me (but remember that I know almost nothing about valves, so that means almost nothing
