Yes, it's a good point. In my case, the highest frequency signals present might be the 10MHz reference for frequency counters and signal generators, but I'm in two minds about bringing those forward anyway (I'm thinking of building a master oscillator that will be hidden away in the back). Apart from those, we're talking about audio frequencies (and just above). Earthing the connectors would indeed cause problems with earth loops. Thinking about it, there might be 3 or 4 video signals - just analogue SD stuff. For these, I do have some genuine 75 ohm barrels that have black rather than white insulating material, so they will stand out nicely.
Compared to video, audio might have a lower bandwidth, but the dynamic range is much greater. It's what makes it fun - for me, at least
