Some chipboard has metal in it from grinding up old pallets etc (takes the edge of saws) I don't know the resistivity figures against species off hand but there will be a variation, like you say wood is hygroscopic and if unsealed will take up moisture from the air etc.
That meter will be handy for high impedance valve stuff (AGC circuits, grid circuits etc)
