Last summer I started to modify an old domestic food mixer to run a coil winder from the ice cream maker drive.
I have got the turns counter to work and the choice of speed control is a Variac or the built in unit.
The built in control runs a bit like a moped at idle on low but will be fine on parts with big bobbins and a lot of turns.
